For a long time, it was considered a weed, gathered in winter when fresh greens were scarce; it wasn't until the 17th century that it was cultivated intentionally in France.

The rosettes are winter-hardy and continue to grow even at temperatures just a few degrees above freezing. The name Rapunzel regionally referred to lamb's lettuce, but in the Brothers Grimm's time, it likely referred to the rampion bellflower, whose roots were also edible. In the Palatinate and Baden regions, lamb's lettuce with bacon and potato dressing is a traditional winter dish.

To useWhat lamb's lettuce does for you

Lamb's lettuce is one of the most nutrient-rich saladsIt provides beta-carotene, vitamin C (around 38 mg per 100 g), folate, iron (about 2 mg), potassium and vitamin K - and that in the middle of winter, when fresh greens are otherwise scarce.

In a large observational study, a daily portion of green leafy vegetables significantly slowed age-related cognitive decline; lamb's lettuce is one such vegetable. The iron is plant-based and is better absorbed when consumed with vitamin C – lamb's lettuce provides some of this itself, and a lemon or apple dressing provides additional benefits.

Like other leafy greens, greenhouse-grown lamb's lettuce can be very nutritious in winter. nitrate This is because more of it remains in the leaves when light is low.
