Lion's Teeth
Its name comes from the jagged leaves, which resemble dandelions. The French call it dent de lion, while in other regions it is also known as cowslip or dandelion.
Pu Gong Ying
In China, it's called Pu Gong Ying and is traditionally considered bitter, sweet, and cold. Here, children blow its little umbrellas into the wind and make a wish.
The ritual
In spring, the young, bitter leaves are added to salads. Dandelion honey is made from the blossoms, and the roasted root was formerly used as a coffee substitute.

Here's how to use it
As a decoction: steep one teaspoon of root in 250 ml of cold water, bring to a boil briefly, and let it steep for 10 minutes. Drink one cup before meals. Roasted, the root makes a caffeine-free coffee substitute. A course of treatment lasting three to four weeks in spring or autumn is recommended.
Good to know
- Do not use in cases of gallstones, bile duct obstruction, or intestinal obstruction.
- If you have stomach ulcers or heartburn, consult a doctor beforehand, as bitter substances are not always compatible.
- Allergy of the daisy family (chamomile, arnica): start cautiously.
As always, remember: a spice or herb is part of good food, not a medicine or medical advice. If you have any health concerns, are pregnant or breastfeeding, or are taking regular medication, it's a good idea to consult your doctor beforehand.
