OriginThe gold of Indian cuisine

Frische Kurkumawurzeln

Turmeric colors curry yellow, hands orange, and half of Indian culture: brides are painted with it, monks dress in its color - and it has been in the kitchen for 4,000 years.

Turmeric originates from India and Southeast Asia, where the plant has been cultivated since Vedic times – as a spice, dye, and medicinal remedy all in one. Marco Polo described it as "saffron that isn't"; the Arabs brought it to Europe, where it was long considered merely a cheap saffron substitute. Only with the curry craze of the 20th century and the curcumin research of recent decades did turmeric become the world's most famous spice root.

India remains by far the largest producer and consumer of turmeric – the average Indian eats two to three grams a day, for their entire life. The rhizome is boiled, dried, and ground; fresh turmeric, orange and juicy, is now also available here. The plant itself is a green, leafy clump, similar to ginger – its power lies underground.

To useWhat turmeric does for you

Turmeric is the most studied spice in the world And the result is a double-edged sword. Curcumin, the yellow pigment, impressively inhibits inflammation, tumor cells, and oxidative stress in the laboratory. In humans, the best studies show a noticeable effect on joint pain caused by osteoarthritis—comparable to painkillers, but with fewer side effects—and indications of benefit in irritable bowel syndrome, blood lipids, and depression.

The catch: Curcumin is hardly absorbed in the intestines and is broken down immediately in the liver. Without assistance, very little reaches the bloodstream. That's why studies using standardized extracts combined with piperine, fat, or special formulations are effective – and that's why the golden rule of the kitchen isn't just superstition: always with fat and pepper.

Frankly, turmeric as a spice is beneficial, not a medicine. Cooking with yellow turmeric daily is good for your body, but not in measurable doses. Those wanting to treat osteoarthritis pain need an extract – and then dosage, quality, and interactions become important considerations.

2–5 %Curcumin in turmeric powder - in the extract 95 %
2.000 %better absorption with piperine from black pepper
500–1,000 mgCurcumin extract daily in the osteoarthritis studies
80 %a significant portion of the world's harvest comes from India.

IngredientsThis is contained in the rhizome

Curcuminoids Curcumin, demethoxycurcumin, and bisdemethoxycurcumin make up two to five percent of the powder and provide color and effect. They are fat-soluble, light-sensitive, and rapidly metabolized in the intestines. Essential oil is also added. Turmeron and Zingiberen, which gives it an earthy scent and improves the absorption of the curcumin itself.

It also contains starch, iron, manganese, potassium, vitamin B6, and fiber. Fresh turmeric contains more essential oil and less curcumin than dried turmeric—it tastes lighter and stains less.

Enhanced combinationsWhat makes turmeric stronger

With no other plant does the combination determine the effect so much: Turmeric alone is color, turmeric with fat and pepper is medicine.

Recording

with black pepper

Piperine blocks the breakdown of curcumin in the liver and increases its bioavailability twentyfold. A pinch of pepper for every yellow – that's the most important rule.

Fat

in Oil, ghee, coconut milk

Curcumin is fat-soluble. It is absorbed when roasted in ghee or simmered in coconut milk, but not when cooked in water. Golden milk without fat is yellow water.

Related

with Ginger

Both from the same family, both anti-inflammatory in different ways - in studies on joint pain, they work better together than individually.

curry

with Cumin & Coriander

The trio of every curry blend: turmeric for color and earth, cumin for warmth, coriander for freshness.

heat

short toasted

Curcumin tolerates heat well – briefly toasting it in fat even makes it more readily available. Just don't burn it, otherwise it will become bitter.

Protection

with Quercetin (onion, apple)

Quercetin also inhibits the breakdown of curcumin. Stir-frying turmeric with onions is not a culinary whim, but a chemical process.

What contradicts itselfIt's best to avoid these combinations.

Recording

not pure in water

Turmeric shots without fat and pepper look healthy but do almost nothing - the curcumin passes through.

The taste

not plenty

Too much turmeric tastes bitter and musty. One teaspoon seasons a pot for four.

Everyday

not on light-colored clothing and worktops

Curcumin stains permanently – wooden boards, grout, plastic, fingernails. Wipe clean quickly; sunlight will bleach.

Health

not extract with Blood thinners

Curcumin inhibits blood clotting. As a spice, it's not a problem, but when taken in capsule form, it should be discussed with warfarin, aspirin, or clopidogrel – and discontinued before surgery.

Health

not extract at Gallstones

Turmeric stimulates bile production – this can trigger colic in people with gallstones. It is contraindicated in cases of bile duct obstruction.

Health

not extract with Iron deficiency

Curcumin binds iron in the intestines. Those taking iron supplements should avoid it; those with iron deficiency should refrain from high-dose treatments.

To which courtWhere it belongs

  • Golden Milk1 tsp turmeric, ½ tsp ginger, a pinch of pepper, 1 tsp coconut oil in 250 ml warm milk - in the evening.
  • DalAdd turmeric to the lentils from the beginning - it colors them and makes them more digestible.
  • Turmeric rice½ tsp in the cooking water with a bay leaf - yellow rice without saffron price.
  • Karfiol aus dem OfenRoast the florets with oil, turmeric, cumin and salt for 25 minutes.
  • curryDie Basis: Zwiebel und Ingwer in Öl, dann Kurkuma, Kreuzkümmel, Koriander kurz mitrösten, dann Paradeiser und alles andere.

  • Turmeric latteLike Golden Milk, but with frothed milk and cinnamon.
  • SoupsPumpkin, lentil, and carrot soup: Sauté the vegetables with turmeric.
  • PickledTurmeric in the brine for pickled gherkins and piccalilli - the English way.
  • Fresh turmericGrated into smoothies, salad dressing, tea - milder, with a citrus note.
Rule of thumb: Always roast turmeric with fat and add pepper – not out of tradition, but because the curcumin won't be released otherwise. Store the powder in a dark place, as it fades in the light.

As a home remedyGolden milk in the evening

Here's how it works

Golden Milk

  1. Put 1 teaspoon of turmeric, ½ teaspoon of ground ginger and a good pinch of black pepper into a small pot.
  2. Add 250 ml of milk (cow, oat or almond) and 1 teaspoon of coconut oil or ghee.
  3. Heat while stirring, simmer gently for 5 minutes - do not boil.
  4. Add a little honey or cinnamon to taste, drink warm - one hour before going to sleep.
For what

Gelenkbeschwerden, Verdauung, Verkühlungszeit, abendliche Ruhe. Das Fett und der Pfeffer sind keine Deko, sondern der Grund, warum das Curcumin überhaupt aufgenommen wird.

Crowd

One cup a day corresponds to about 1–3 g of turmeric – the amount that Indians consume daily. For therapeutic doses (osteoarthritis), an extract with 500–1,000 mg of curcumin is needed – in this case, consult a doctor or pharmacist.

Ayurveda & TCMWhat the old systems say

Ayurveda

Haridra It is one of the central plants of Ayurveda: cleansing, anti-inflammatory, blood-building, beneficial for skin, liver, and digestion. It reduces Kapha and Vata, and in moderation, Pitta. It is used daily in cooking, externally as a paste for wounds and skin, and in rituals as the color of good fortune.

Traditional Chinese Medicine

Jiang Huang In Traditional Chinese Medicine (TCM), it moves blood and Qi, releases stagnation, and relieves pain – for shoulder and joint pain, menstrual cramps, and injuries. It is a common remedy in formulas for "blood stasis," often combined with ginger and cinnamon.

Warning noticesWhen you should be careful

Please note

  • Blood clotting: Curcumin extracts inhibit coagulation - do not use with blood thinners, discontinue two weeks before surgery.
  • Bile: No extracts for gallstones; contraindicated in case of bile duct obstruction.
  • Iron: High doses of curcumin bind iron - avoid iron supplements if you have iron deficiency.
  • Stomach: High doses can cause heartburn, nausea, and diarrhea.
  • Liver: Isolated cases of liver damage have been described in connection with high-dose, highly bioavailable curcumin preparations - monitor values during long-term use.
  • Pregnancy: Turmeric in food is safe, but extracts are not – they can stimulate the uterus.
  • Medications: Curcumin affects liver enzymes - ask beforehand if you are taking chemotherapy, diabetes medication, or immunosuppressants.
