OriginThe tuber that fed Europe

Eine mittelgroße Erdapfel (150 g) liefert rund 600 mg potassium, 15 to 20 mg Vitamin C, Vitamin B6, magnesium, and approximately 3g of high-quality protein – combined with egg, this makes for one of the highest-quality protein mixtures available. The nutrients are best preserved when potatoes are boiled in their skins.

Erdäpfel bestehen zu etwa 78 Prozent aus Wasser, zu 15 bis 18 Prozent aus Stärke, dazu Eiweiß, potassium, Vitamin C, Vitamin B6, magnesium, fiber (especially in the peel) and polyphenols such as chlorogenic acid, particularly in blue and red varieties.

Green parts, sprouts and the peel of young tubers are contained Glycoalkaloids wie Solanin, die Übelkeit, Bauchschmerzen und Durchfall verursachen können.

protein

with Ei & Topfen

Colon

cooked & cooled

Erdapfelsalat, Bratkartoffeln vom Vortag: mehr resistente Stärke.

Omega-3

with Leinöl & Topfen

Nutrients

as boiled potatoes

Cooking in the peel preserves vitamin C and potassium.

Herbs

with Rosemary & garlic

Baked potatoes with olive oil and rosemary.

Vegetables

with Spinach & cabbage

Erdäpfel mit Blattgemüse - das Vitamin C hilft beim Eisen.

What contradicts itselfIt's best to avoid these combinations.

Green

not green or sprouted

Solanine - generously remove green areas and sprouts, discard very green tubers.

Deep frying

not too dark fry

Acrylamide is formed during strong browning – „gilding instead of charring“.

storage

not in the refrigerator

Below 6 °C, starch turns into sugar - resulting in more acrylamide during frying and a sweeter taste.

storage

not in the light

Light promotes the formation of solanine.

Sugar

not daily puree in diabetes

kidneys

not in quantities at Renal insufficiency

Very high in potassium - soaking and double boiling reduces the content.

  4. Secure it with a scarf or towel and leave it for 20 to 30 minutes until it cools down.
